Very Easy Quiche (No need of pastry sheet!)

Being a lazy cook, I treasure full proof easy recipes. So when a colleague of mine (Rowena) share this very easy Quiche recipe with me, I was eager to try out. The best part of this recipe? No need to use frozen pastry sheet! And there's plenty of room for your own creativity. This is a very versatile dish - add whatever you like and as long as you keep the basic the same.

Basic Recipe Ingredients

1 cup pastry mix
1 1/2 cup milk

1/2 cup grated cheddar cheese
3 eggs


Instructions:
Whisk the eggs, and then add in the milk and pastry mix. Stir together until smooth. **(don't worry about getting rid of all the little lumps, it doesn't seem to matter. just stir until as smooth as you can get). Add the grated cheese.

Now you can get creative! With a 3 egg quiche you can add in a can of well drained corn kernel, pre cooked onion and mushroom and bacon. (Omit bacon and add herbs and some salt if you are vegan). Pour into a greased 30cm square container and decorate with tomato slices on top. (I used the pie dish as you can see in the photo and it holds just nice).

Put into preheated oven at 190 degrees C for about 35-40 minutes. (It shouldn't be sloppy in the middle, if it is leave in the oven for another 5-10 minutes). This quiche freezes well.

Note: If you would like to add grated carrots, grated zucchini, spinach etc, just add a couple more eggs to help bind larger quantities. You can just add egg whites if you are conscious of fat and cholesterol. And perhaps reduce the milk by 1/4 cup. Fetta and Ricotta cheese can be used instead of cheddar, it seemed to work ok.

The end result - Thin layer of crust was formed on the side of the Quiche like using pastry sheet but it is a much thiner layer. So for people who likes pastry, this may not be pleasing but it suited me as I prefer less pastry so the thiner layer is just right for me.
